The fatty acid composition has been traditionally used to discriminate the different vegetable oils and confirm their authenticity. The aim of the present study was to check the possible use of the fatty acid profile to differentiate varietal olive oils of the three most important cultivars in Northeast Portugal (Cobrançosa, Madural and Verdeal). Fifteen varietal olive oils from each of the three cultivars were collected to achieve that goal. Fatty acids were determined, as methylesters, by HRGC. Methylesters were prepared by transesterefication with BF3/methanol after saponification with methanolic KOH. The fatty acid pattern was performed with a Chrompack CP9001 equipped with a split-splitless injector, a FID and a 50m x 0,25 mm i.d. fused silica capillary column coated with a 0.19µm film of CP-Sil88 (Chrompack). The temperatures of injector, detector and oven were 230, 250 and 185ºC, respectively. The results as shown by two-way Anova techniques and discriminant analysis demonstrate that C16:1c, C17:1, C18, C18:1c, C18:2cc and C18:3ccc can be used to discriminate the origin of each of the three olive oils.

The short shelf-life of mushrooms (1-3 days at ambient temperature) is an impediment to the distribution and marketing of the fresh product. Despite of the immense popularity of this food all over the world data regarding alternative technologies to increase mushrooms shelf-life are scarce. Treatment by irradiation emerges as a possible conservation technique that has been tested successfully in several food products and is regulated in the European Union by the Directive 1999/2/EC. Herein, the influence of gamma irradiation dose (0.5 and 1 kGy) over the fatty acids profile of Lactarius deliciosus L. wild mushroom, collected in the Northeast of Portugal (November 2011), was evaluated by gas-chromatography coupled to flame ionization detection (GC-FID). The analyses were performed after 0 (control), 4 and 8 days of storage at 4 oC. The control and the irradiated samples revealed an identical profile, with C18:0 (stearic acid), C18:2n6c (linoleic acid), C18:1n9c (oleic acid) and C16:0 (palmitic acid) as the main fatty acids. Polyunsaturated fatty acids play an important role in human nutrition, being associated with several health benefits. The analyzed vegetables, in spite of his low fat content, lower than 2 %, presents a high proportion of PUFA of n-3, n-6 and n-9 series, such as α-linolenic, linoleic, and oleic acids, respectively. Wild edible plants contain in general a good balance of n-6 and n-3 fatty acids. The present study tries to contribute to the preservation and valorization of traditional food resources, studying the fatty acids profile of twenty wild vegetables by GC-FID. Results show that species in which leaves are predominant in their edible parts have in general the highest PUFA/SFA ratios: Rumex pulcher (5.44), Cichorium intybus (5.14) and Papaver rhoeas (5.00). Due to the low n-6/n-3 ratios of the majority of the samples, they can be considered interesting sources of n-3 fatty acids, especially those with higher total fat amount, such as Bryonia dioica, Chondrilla juncea or Montia fontana, with the highest contents of α-linolenic acid (67.78, 56.27 and 47.65%, respectively). The wild asparaguses of Asparagus acutifolius and Tamus communis stand out for their linoleic acid content (42.29 and 42.45%, respectively). Annona (Annonaceae) is an important source of fruits in the Brazilian Cerrado and the Amazon Rainforest. Some Annona species are widely commercialized as fresh fruit or as frozen pulp. Seeds are accustomedly discarded. Our main goal was to analyze fatty acids profile from seeds of A. crassiflora and A. coriacea from Cerrado, A. montana from Amazon Forest, and three cultivars (A. cherimola cv. Madeira, A. cherimola x A. squamosa cv. Pink`s Mammonth and A. cherimola x A. squamosa cv. Gefner). The total oil yield ranged between 20 and 42% by weight of dry mass. The A cherimola x A. squamosa cv. Gefner has significantly higher total lipid yield than all other samples. 100 g of fruit of this species present 6-8 g of seeds. Considering the fruit production of Chile (over 221 ton of fruits/year), more than 1300 ton of seed/year could be obtained, which could provide at least 200 ton of seed oil. Oleic acid was predominant for most samples, but for A. montana linoleic acid was the most abundant FA. Phenotypic variation on FAME profile was observed. Os ácidos graxos trans competem com os ácidos graxos essenciais inibindo as enzimas envolvidas na síntese dos ácidos graxos polinsaturados de cadeia longa. Quantidades adequadas de ácidos graxos essenciais na dieta minimizam este efeito. No entanto, pouco se conhece da ação dos isômeros trans, sob condições de restrição ou deficiência dietética dos ácidos graxos essenciais, sobre o percentual de deposição tanto dos próprios isômeros trans, como dos ácidos graxos polinsaturados nos lipídios dos tecidos. Foram avaliadas dietas ricas em ácidos graxos trans e com diferentes concentrações de ácidos graxos essenciais em ratos. A incorporação de ambos foi proporcional à concentração na dieta, mas variou entre os tecidos estudados. Verificou-se que as quantidades de ácidos graxos trans incorporadas pelo tecido adiposo foi a maior, enquanto que o cérebro incorporou a menor quantidade. A despeito da incorporação dos ácidos graxos trans, o perfil de ácidos graxos do cérebro manteve-se estável em relação às variações dietéticas. Nas pesquisas com bovinos de corte, além do bom desempenho animal e da viabilidade econômica, busca-se agregar características qualitativas à carne produzida. O fornecimento de milho alto óleo a bovinos de corte em terminação aumenta o ganho de peso e a qualidade de carcaça, quando comparado ao milho comum. Buscou-se consolidar as informações quanto aos efeitos das dietas para novilhos Nelore em confinamento, sobre os parâmetros da produção animal, como ganho de peso, rendimento de carcaça, degradabilidade das dietas, efeitos sobre os protozoários ciliados e outras medidas ruminais, parâmetros físicos do Longissimus dorsi, composição centesimal da carcaça, composição do ganho e perfil de ácidos graxos nesse músculo. Foram utilizados 48 novilhos da raça Nelore, com peso vivo inicial médio de 435 kg, submetidos a um dos seis tratamentos, usando dois tipos de milho (comum e alto óleo) e três níveis de inclusão de milho no concentrado (25%, 40% e 55%). Os objetivos deste trabalho foram avaliar os efeitos do teor de concentrado em dietas com óleo de soja ou peixe sobre o consumo, a produção e composição do leite, digestibilidades aparentes total e ruminal e sobre os perfis de ácidos graxos no omaso e na gordura do leite de vacas leiteiras. Foram utilizadas quatro vacas da raça Holandesa, com cânulas ruminais, 109 ± 10 dias em lactação, produção média de 31,24 ± 8,57 kg de leite e peso médio de 652 ± 37 kg, no início do experimento. Foi utilizado o delineamento experimental em Quadrado Latino 4x4, com períodos de 21 dias, sendo os 14 primeiros para adaptação e os sete últimos para colheita de amostras, com arranjo fatorial (2x2) dos tratamentos. Os tratamentos foram dietas totais misturadas, contendo silagem de milho, suplementadas com baixos (40%) ou altos (60%) teores de concentrado e com 2% de óleo de soja ou de peixe na matéria seca (MS). Não houve da interação entre a fonte de óleo e o teor de concentrado para a maioria das variáveis estudadas. Nos últimos anos tem-se destacado a importância dos ácidos graxos presentes na carne e leite, em especial aqueles que poderiam influenciar a saúde humana. A deposição de gordura, e também sua composição, é resultado da interação entre os fatores genotípicos e fenotípicos. Sendo assim, o contínuo melhoramento genético, com a seleção de determinados genes, pode influenciar na qualidade do produto que chega à mesa do consumidor. Objetivou-se com este estudo avaliar os padrões de expressão dos genes diferencialmente expressos relacionados ao perfil de ácidos graxos da carne de bovinos Nelore confinados, por meio da verificação dos padrões de expressão de genes envolvidos no metabolismo lipídico e na síntese dos ácidos graxos palmítico (C16:0), esteárico (C18:0), oléico (C18:1 cis-9), linoléico (C18:2 cis-9 cis- 12), CLA (C18:2 cis-9 trans-11) e linolênico (C18:3). Purpose: The purpose of this paper is to characterize oils extracted from Bertholletia excelsa, Lecythis pisonis, Dipteryx lacunifera, Carya illinoensis and Juglans regia, regarding their characterization and fatty acid profile. Design/methodology/approach: The oils were extracted from oilseeds by cold pressing and physico-chemical characterization was performed by using standard methods for oils and fats. The oxidative stability and fatty acid profile also were determined. Findings: According to the results, the physico-chemical properties of oils from nuts and walnuts were comparable to those of good quality conventional oils. The oil seeds are a good source of unsaturated fatty acids, especially oleic and linoleic acids. Research limitations/implications: Implies the identification of fatty acid profile and physico-chemical properties of oils extracted from nuts and walnuts, and to prevent certain types of diseases. This paper aimed at evaluating fatty acids profile and the total alteration of lemon seeds extract added to soybean oil under thermoxidation, verifying the isolated and synergistic effect of these antioxidants. Therefore, Control treatments, LSE (2,400 mg/kg Lemon Seeds Extract), TBHQ (mg/kg), Mixture 1 (LSE + 50 mg/kg TBHQ) and Mixture 2 (LSE + 25 mg/kg TBHQ) were subjected to 180 C for 20 h. Samples were taken at 0, 5, 10, 15 and 20 h intervals and analyzed as for fatty acid profile and total polar compounds. Results were subjected to variance analyses and Tukey tests at a 5% significance level. An increase in the percentage of saturated fatty acids and mono-unsaturated, and decrease in polyunsaturated fatty acids was observed, regardless of the treatments studied. For total polar compounds, it was verified that Mixtures 1 and 2 presented values lower than 25% with 20 h of heating, not surpassing the limits established in many countries for disposal of oils and fats under high temperatures, thus proving the synergistic effect of antioxidants. © 2011 Association of Food Scientists & Technologists (India).

Fruits and nuts from the North and Northeast regions of Brazil were collected to determine the fatty acid profile of their oils. The species studied were Brazil (Bertholletia excelsa H.B.K.), Mucajá (Couma rigida M.), Inajá (Maximiliana maripa D.), Jenipapo (Genipa Americana L.), and Buriti (Mauritia flexuosa L.) nuts. Fatty acid methyl esters were analyzed by gas chromatography with flame ionization detection (GC-FID). Brazil nut major fatty acid was 18:3n-3 (α-linolenic acid), and Buriti nut had approximately 23 times more 18:3n-3 than the pulp. Mucajá nut presented high content of 12:0 (lauric acid) and 16:0 (palmitic acid), and Mucajá pulp showed significant levels of 18:2n-6 (linoleic acid). Considering the PUFA (polyunsaturated fatty acid) sum values, almost all fruits and nuts analyzed presented very high levels of these compounds. Regarding n-6/n-3 ratio, only Brazil Nut, Buriti Nut, Inajá pulp, and Jenipapo pulp corresponded to the desired profile. These Brazilian fruits and nuts could be of potential interest due to their high nutritive value and lipid content.

The objective of this study was to investigate the fatty acid composition of Pimedolus maculatus fillets of fish fed with different diets. The fish were submitted to an adaptation period (over 30 days) and fed only a control diet (diet I). After this period, the fish were divided into two groups: one group received a diet enriched with flaxseed oil (diet II), and the other received a diet enriched with conjugated linoleic acid (CLA) (diet III). Subsequent collections were undertaken after 25 and 50 days. Compared to the control samples, fish fed diet II showed an increase in concentrations of total fatty acid omega-3 (n-3) in the fillets, with an improvement ratio of n-6/n-3. The incorporation of CLA into fish fed diet III was successful. Supplementing the diet of Pimedolus maculatus with CLA and flaxseed oil led to improvements in nutritional quality and fatty acid profile of the fish fillets.

It is widely accepted that the consumption of ω-3 polyunsaturated fatty acids has beneficial effects on human health. In this work, ten brown macroalgae species collected along the Portuguese west coast were studied for their fatty acids composition by GC-MS after alkaline hydrolysis and derivatization. The results of this survey showed that different macroalgae from the same region display distinct fatty acids profile. Concerning ω-3 polyunsaturated fatty acids, eicosapentaenoic acid was found in all but one species. Additionally, some species contained docosahexaenoic acid. Linoleic acid, an essential fatty acid of the ω-6 series, was present in all studied macroalgae. Fucus spiralis L. exhibited the highest amounts of monounsaturated fatty acids and of polyunsaturated fatty acids of the ω-3 and ω-6 series. The ω-6/ω-3 ratio in half of the studied species was lower than 1. This information reinforces the potential application of some brown macroalgae as dietary sources of polyunsaturated fatty acids.

En la región nordeste de Brasil, debido a la elevada salinidad de los acuíferos, existe la necesidad de utilizar procesos de desalación. Sin embargo, estos procesos generan residuos con alta concentración salina, con significativo impacto ambiental. El objetivo de este trabajo fue el cultivo de Arthrospira platensis en tres medios de cultivo diferentes: medio de Paoletti, medio de agua salinizada y medio de agua de desecho obtenida en el proceso de desalación de acuíferos. Las microalgas fueron cultivadas en laboratorio, con condiciones controladas, en fotobiorreactores de 4 L, a 30±1°C y periodos de 12 horas de claridad/oscuridad con iluminación de 140 μmol·m–2·s–1 e inyección constante de aire (0,5 L·L–1·min–1). Fue verificado el efecto de los diferentes medios en la concentración celular, productividad, contenido total de lípidos y perfil de ácidos grasos. La mayor concentración celular, así como la productividad máxima fueron encontradas en el medio de agua de desecho de desalación, 4,954 (±0,554) g·L–1 y 0,225 (±0,042) g·L–1·día–1 respectivamente. The influence of culture temperature and the concentration of sodium nitrate (NaNO3) on the gas-chromatographic profile of the fatty acids of the filamentous cyanobacterium Spirulina platensis was evaluated. We found that temperature was the most important factor and that the greatest amount of gamma-linolenic acid (GLA) was obtained at 30 ∞C, the fatty acid profile of the Spirulina cultivated showing that (in order of abundance) palmitic, linolenic and linoleic acids were most prevalent.

Dietary lipids determine the incorporation and fatty acid composition of the organism, especially in organs most susceptible to its modulating action on membrane phospholipids esterified fatty acids, such as the liver. Ketogenic diets, widely used to treat various disorders, often use long-chain triacylglycerols, however, medium chain triglycerides are considered an alternative source, since they are digested, absorbed, oxidized and removed from circulation more rapidly than long chain triacylglycerols. In addition, it lead to the formation of ketone bodies quickly, without the influence of hormonal or nutritional factors. To contribute to the discussion, this paper presents a review chapter, entitled Mitochondrial dysfunction in nonalcoholic fatty liver disease, which gathers information on oxidative stress and consequent mitochondrial dysfunction in the context of liver disease. This work had as an objective, to analyze, both physically and chemically, five olive tree varieties kept in the EPAMIG Germplasm Bank at the Experimental Farm, in the town of Maria da Fé, MG. Physical characteristics of the fruits and seeds (weight, diameter and length) and some chemical characteritics of the oils extracted from five varieties (acidity, iodine, saponification, peroxide indices and the fatty acid profile) were evaluated. The Negroa variety presented an average percent of lipids (28.2%) significantly higher than the others (p<0.05). Out of the studied varieties, both Negroa and JB1 showed the highes yield and acidity values and the saponification, iodine and peroxide indices were more consistent with the ANVISA norms (2005) and the Codex Alimentarius (2003). All the varieties grown at Maria da Fé presented oleic acid levels within those recommended by Codex alimentarius and significantly higher than the analyzed commercial extra virgin oleic acid level (p<0.05). The fatty acid profile found showed that all the varieties (JB1, Negroa, Ascolano 315, 0025 and 0004) have adequate values for the main groups of fatty acids, compared with the legislation. Improving the yield is the primary aim for the macadamia breeding program, together with it the breeder has the constant challenge of trying to add others traits which will promote macadamia value. Among these stands out the study of pollination character, a factor that brings benefits to the production, since plants with this feature are independent of pollinating vectors, which are currently declining in population. Along with this feature is the search for a product (nut) with a nutritional value which will bring a beneficial to human health, for macadamia the goal is the development of oil with a good rate of monounsaturated fats. Faced with these challenges, the objective was to identify genotypes with greater production of nuts and to provide a high rate of self-pollination, as well to establish strategies to better characterize the profile of macadamia nut oils. For the self-fertility experiment, racemes from cultivated and wild macadamia tree were tagged and bagged for comparing self-pollination and open pollination. The aim of this study was to analyze the chemical composition and the fatty acids (FA) profile of broiler chicken (breast and thigh/on-thigh) fed diets containing 10 and 20% of barley and a control diet. The FAs were evaluated by gas chromatography. There was not a significant difference (p > 0.05) in the breast chemical composition. In the thigh/on-thigh cut, the ration containing 20% of barley reduced the ashes (p < 0.05). Regarding the saturated FA composition, only the breast myristic acid treated with 10% of barley was reduced (p < 0.05). None of the diets influenced the polyunsaturated (PUFA) and monounsaturated (MUFA) FA's content (p > 0.05). As for the ω6/ω3 ratio, the highest one was observed in the 20% barley fed animals, in both cuts, being considered the worst quality. It can be concluded that the 20% barley ration was worse than the others and the 10% barley ration was better than the control ration, especially when considering the saturated FA quantity that was reduced.

Cholesterol and fatty acids profile of Brazilian commercial chicken giblets

This study was carried out to determine the chemical composition, cholesterol contents and fatty acids profile of Brazilian commercial chicken giblets. The analysis were performed in gizzard, liver and heart in natura and also in cooked gizzard, fried liver and roasted heart. Fat and cholesterol contents ranged from 0.88% and 72.68 mg/100g, in cooked gizzard, to 22.19% and 213.18 mg/100g, in roasted heart. As the fat content gets higher, so does the cholesterol content. Palmitic (C16:0) and stearic acids (C18:0) were the predominant saturated fatty acids (SFA). The C16:0 ranged from 6.39% in cooked gizzard to 18.51% in fried liver. The C18:0 level ranged from 6.62% in roasted heart to 19.19% in cooked gizzard. Linoleic acid (C18:2omega 6) was the predominant polyunsaturated fatty acid (PUFA). The data revealed that the three different analysed giblets presented a good PUFA/SFA ratio, with values of 1.11, 1.14 and 1.40 for cooked gizzard, fried liver and roasted heart, respectively.
